22 Feb Civilized onions

This is the funny name that Virve und Tapio from Turku have given their recipe. They‘d found the Asparagus Vinegar from Gegenbauer last summer in the wine shop von Teiskon Viini and came up with the following recipe:
Ingredients:
- 3 medium size red onions
- 2 tbsp sugar
- 3 tbsp Asparagus Vinegar
Method:
- Thinly slice the onions and pull them apart.
- Cook the onions, sugar and the Asparagus Vinegar in a pan over medium heat for about 2-3 minutes. Stir the whole time. The onions should only be slightly soft – they should still have a little bite to them.
- Take off the heat and cover pan with tin foil and let it cool. Pour it into a bowl , cover with plastic wrap and refrigerate.
They taste best the next day! Keeps in the fridge for some time…if there is any left. Virve and Tapio packed this delight also into small clean jars as presents for their friends for Christmas.
It tastes nice as a side dish or in a roast beef or chicken sandwich or in a salad or whatever you want to try it with. Your imagination is the limit!
