Quick Blue cheese and pear pie

Ingredients:

  • 1 ready made potato and rye dough or homemade quiche dough
  • 2-3 pears
  • 170 – 200g blue cheese
  • 200g Crème Fraîche
  • 1 egg

Method:

1. Blind backe the pie bottom.

2. Peel and core the pears. Cut them lengthways into slices and place the slices on the pie like a fan.

3. Crumble the blue cheese and mix it with the Crème Fraîche and the egg.

4. Pour the mixture evenly over the pears and bake in the oven at 175°C/ 347°C/ gas 4 until the mixture has firmed and slightly browned.

 

Serve with salad and some Sour Cherry or Black Currant vinegar. A sprinkling of one of these berry vinegars cuts nicely the richness of the cheese.
