22 Feb Apple carpaccio
Ingredients:
- Slightly tart apples
- Maldon Salt ( sea salt flakes)
- Freshly ground pepper
- Good olive oil
- Gegenbauer Golden Balsam Vinegar oder James Balsam Vinegar
Method:
- Wash the apples and cut them into very thin slices. Use a mandolin slicer if you have one. (There are probably some nice local apples that you don’t need to peel.)
- Arrange the apple slices on a large plate, season with salt and pepper and drizzle some olive oil and Golden Balsam Vinegar or James Balsam Vinegar over them.
This would go nicely with a steak for example!
