Apple carpaccio

Ingredients:

  • Slightly tart apples
  • Maldon Salt ( sea salt flakes)
  • Freshly ground pepper
  • Good olive oil
  • Gegenbauer Golden Balsam Vinegar oder James Balsam Vinegar

Method:

  1. Wash the apples and cut them into very thin slices. Use a mandolin slicer if you have one. (There are probably some nice local apples that you don’t need to peel.)
  2. Arrange the apple slices on a large plate, season with salt and pepper and drizzle some olive oil and Golden Balsam Vinegar or James Balsam Vinegar over them.

This would go nicely with a steak for example!
