23 Feb A light courgette and goats cheese salad

Serves: 1
Ingredients:
- 1 courgette
- 100-150 g Goats cheese
- Salt, pepper
- Olive oil
- Raspberry Vinegar
- Fresh raspberries
- Thyme leaves
Method:
- Use a peeler to cut the courgette into very thin long slices.
- Crumble the goats cheese into small pieces over the courgette slices.
- Season with salt and pepper (preferably freshly ground) and drizzle with olive oil and Raspberry Vinegar.
- Garnish with fresh raspberries and thyme leaves.
