A light courgette and goats cheese salad





Serves: 1

Ingredients:

  • 1 courgette
  • 100-150 g Goats cheese
  • Salt, pepper
  • Olive oil
  • Raspberry Vinegar
  • Fresh raspberries
  • Thyme leaves

Method:

  1. Use a peeler to cut the courgette into very thin long slices.
  2. Crumble the goats cheese into small pieces over the courgette slices.
  3. Season with salt and pepper (preferably freshly ground) and drizzle with olive oil and Raspberry Vinegar.
  4. Garnish with fresh raspberries and thyme leaves.
